Weekend Hearty dinner
So, it's the weekend and all you need in a cold weather in the winter is a nice hearty dinner! but you know what, i'm recommending this for all you newly weds out there, be it hubby or wifey, this is one meal that can make your spouse go omg she/he can cook! :p You can whip up all of this or maybe just one or two of it.
Cooking level: Intermediate
Grilled breaded Chicken
Mix a tbsp of plain flour with some garlic powder. Set aside. Then on 2 separate plate, one with white breadcrumbs and dried parsley and the other plate with beaten egg. Clean your chicken breast, fillet it and pound it with your pounder. I used my hand to slap it cos we didn't have anything i could think of to pound it. but thinking about it now, i should have just used the back of one of my pan to do the trick! Anyways so after pounding, coat the breast on the flour mixture first, dust it and put it in the egg mixture to coat the egg and finnally on the breadcrumb mixture and put it on the pan that is already been covered with melted butter and cook! You can also bake it in the oven 19 deg celcius, 15 minutes or Gas Mark 6 for 15-20 minutes. Just keep on checking to make sure its not overcook.
Yorkshire Pudding
I actually used a store bought one! My toddler loves this! she just eats it by itself. You can refer to the packaging for cooking method. i just put some on the baking tray and put it in the oven to bake. just takes me 4 mins to prepare toddler snack hiks!
Mashed Potato
This is the most simplest ever! So suitable if you've got a baby whose starting solid. but i would recommend giving them after 8 months as their stomach has matured a bit and leave out the salt and pepper yeah. Go ahead and clean and cut the potatoes and boil them on the stove. Drain it when it's already cooked (test with your knife by poking into the potatoes. if it goes through easily then its cooked). Drain it on a strainer and transfer it to a bigger bowl and mash with a masher. Then i put in some milk and greek yogurt. You can also use sour cream and double cream. At this stage you can separate some for your baby. Continue and sprinkle some salt and black pepper and mix.
Homemade Coleslaw
Shred some carrots and iceberg lettuce. Yup i'm not using cabbage here. I prefer using lettuce instead. Then mix it with either Greek yogurt or you can do it with mayonnaise. mix and sprinkle some salt and pepper and your done!
Lemon Prawn Asparagus
i know asparagus in Malaysia is quite expensive unless you go all the way up to Cameron Highland. But here in the UK its quite affordable so this is quite a staple food for us. Heat your pan with a bit of olive oil to coat your pan. Throw in the asparagus (cut it into 2), salt and pepper. Fry it well till the asparagus has soften and is bright green in colour. Add 6 cloves of garlic that has been chopped finely and stir fry it all together. Add half of lemon's juice and sprinkles of grated lemon skin. Mix all together for about 2 minutes and finally add in the prawns and mix it altogether. Cook till the prawn turns pink in colour. Make sure not to overcook the prawn because we still want it to be succulent.
